Time to tickle your tastebuds!

It is such a common misconception that healthy food is bland and boring, but that couldn’t be further from the truth! With a little bit of imagination (and practice) you can create fantastic healthy food - a few herbs and spices is all you need.

I am a big fan of Food TV and have recently been getting my mind into Thai food (not the coconut cream kind) and am finding that delicious combination of coriander, chilli and fish sauce is such a winner! I now grow my own chillis (which I HIGHLY recommend as they grow super easily and will save you heaps of money) and am hoping that one day I will get my coriander to grow nicely (without bolting).

Anyway, this is my new favourite dish and I just had to share with you – I am loving the healthy summer feel to something so simple.

Thai Chicken Salad – Larb Gai Serves 2-3

Ingredients:

  • 1/4 cup rice
  • 300g chicken mince
  • 2 fresh red chillis, finely sliced
  • Juice of 1 lemon or lime
  • ½ red onion, finely chopped
  • 2 tbsp fish sauce
  • Handful of mint leaves - chopped
  • Handful coriander leaves – chopped
  • Serve with: 1 small iceberg lettuce either shredded or use the whole leaves to serve the salad in if you prefer, chopped cucumber and steamed rice

Instructions:

  1. Heat a frying pan over a medium heat and add the dry rice – toast rice grains until golden. Cool and then grind up into a fine powder in a pestle and mortar
  2. Heat a sauce pan and add chicken mince, add water to the pan until the chicken is JUST covered (will be around ½ - ¾ cup most likely), don’t add too much! Stir chicken until cooked through. Add the ground rice and cook for about 5 minutes over a low heat. The rice will absorb the water surrounding the chicken.
  3. Add the lemon or lime juice, chopped chilli, red onion, fish sauce and stir through
  4. Add mint and coriander
  5. Serve with cooked rice, lettuce and cucumber. You can make a ‘shell’ with the lettuce leaves and fill with rice and then the chicken mixture on top if you like – YUM!!
