Vegetable-Full Chilli
Cheap, cheerful and delicious!
Ingredients
1 large onion finely chopped
2 carrots grated
1 large courgette grated
1 tbsp Mexican spice mix or whatever you have at hand, a few chilli flakes is fine if that’s all you have in your cupboard
1 can chopped tomatoes
1 can chilli beans and 1 can kidney beans (or whatever beans you have in)
1 cup corn and/or peas
How to make
Fry onion, carrot, courgette in a little oil until soft
Add spice mix/chilli
Add tomatoes and beans
Cook for 20mins, add splash of water if needed
Serve with rice and then toppings of your choice - maybe cheese, avocado, tomato salsa, natural yoghurt or sour cream?
High fibre, low cost… winner!
Adapt to add any vegetable that you have in! No courgette, add more carrot and corn/peas.
