Veggie Layer Bake

Ingredients (serves 4-6)
- 1 large onion, peeled 
- 300g potatoes, peeled 
- 300g kumara, peeled 
- 200g carrots, peeled 
- 200g parsnips, peeled 
- ¼ cauliflower, cut into small florets 
- ½ broccoli, cut into small florets 
- 6 eggs, beaten 
- 1.5 cups milk 
- 200g cup sour cream 
- 1 cup grated cheese 
How to make
- Firstly, slice the onion, potatoes, kumara, carrots and parsnips thinly, ideally 0.5 cm slices. I use my Kenwood Food Processor slicing blade for this. 
- Next, take ½ of the sliced vegetables and create an even layer in the bottom of a thoroughly greased baking dish (approx 35 x 25 cm). 
- Place the chopped broccoli and cauliflower on top of the sliced vegetables, then layer the remaining sliced veggies top, again relatively neatly so they cook evenly. 
- Next, beat the eggs with the milk and sour cream and pour over the veggies. 
- Top with grated cheese and bake in the oven at 200 degrees for approx 30 minutes or until vegetables are tender and liquid has set.
