Corn, Veg and Cottage Cheese Fritters

These fritters are naturally gluten-free and ideal for using leftover bits and pieces from your fridge and freezer! Great for a super-quick and easy lunch or light dinner.

Ingredients (serves 1)

  • 1 egg

  • 1-2 tbsp thick cottage cheese (avoid adding too much liquid)

  • 1/2 cup well-drained corn kernels

  • 1-2 tbsp of diced veg (red onion or spring onion, capsicum, edamame beans or green peas all work)

  • 1/4 tsp baking powder

  • Pinch of salt and a grind of pepper

  • Serve with: salad leaves (eg mixed greens, baby spinach, rocket), tomatoes and avocado

  • Optional: sour cream, natural yoghurt or extra cottage cheese / chilli flakes / kimchi

Method

  1. Mix all the fritter ingredients together in a bowl

  2. Cook spoonfuls of mixture in a lightly oiled pan, flip after a few minutes and cook until golden on both sides (makes 4-5 fritters depending on size)

  3. Serve fritters with optional extras, alongside salad lightly drizzled with olive oil and lemon juice if you like
