Quick Meal Idea - Mushroom + Spinach Omelette

One of the best easy breakfast, lunch, or dinner meals for one person (or a few people)!

Change up the filling with what veg you have to hand - options are endless!

🍄 1. Pan fry sliced mushrooms with thyme, salt and pepper, set aside  

🥚 2. Whisk eggs in a bowl with milk then pour egg into pan and add spinach, mushrooms and cheese, cook until egg is set and golden underneath

🥬 3. Fold omelette in half and slide onto your plate

OPTIONS:

- Double the ingredients for two people and cut the omelette in half to serve

- Boost/swap veggies - try capsicums, courgette, onion

- Avocado and tomato are great to serve alongside too
