Ricotta Pear Toast Topping
This is a fabulous light option for an Easter brunch if you’ve already overdone the chocolate bunnies! A healthy combination of fruit, nuts and calcium-rich ricotta, this is a satisfying, fruit filled meal that has natural sweetness of pears and honey.
Ingredients (serves 1)
1 slice of bread (this can be sourdough, ciabatta, raisin bread or any other bread you particularly fancy)
¼ cup ricotta cheese (mix in a small pinch of cinnamon for an Easter flavour if you fancy)
1 tablespoon chopped nuts, pistachios or walnuts work well!
1 small pear, thinly sliced
1 tsp honey or maple syrup if you prefer
How to make
Toast the bread slice.
Spread the ricotta cheese over the toast. Sprinkle with pistachios and then layer with pear slices. Drizzle with honey and serve.
