Ricotta Pear Toast Topping
This is a fabulous light option for an Easter brunch if you’ve already overdone the chocolate bunnies! A healthy combination of fruit, nuts and calcium-rich ricotta, this is a satisfying, fruit filled meal that has natural sweetness of pears and honey.
Ingredients (serves 1)
- 1 slice of bread (this can be sourdough, ciabatta, raisin bread or any other bread you particularly fancy) 
- ¼ cup ricotta cheese (mix in a small pinch of cinnamon for an Easter flavour if you fancy) 
- 1 tablespoon chopped nuts, pistachios or walnuts work well! 
- 1 small pear, thinly sliced 
- 1 tsp honey or maple syrup if you prefer 
How to make
- Toast the bread slice. 
- Spread the ricotta cheese over the toast. Sprinkle with pistachios and then layer with pear slices. Drizzle with honey and serve.
