Peanut and Oat Snack Balls

These peanut and oat snack balls make a great bite-sized, healthy snack between meals. This recipe works well for a snack idea for those requiring a low FODMAP diet.

Preparation time: 20 minutes
Chilling time: 15 minutes

Ingredients (makes 15 balls)

  • ¼ cup peanut butter (ideally 100% peanuts, crunchy or smooth)

  • 2 Tbsp water

  • 2 Tbsp maple syrup

  • 1 tsp vanilla

  • 1½ cups rolled oats blended to a flour (see tip)

  • 1 Tbsp chia seeds or linseeds/flaxseeds (optional)

  • 1 tsp cinnamon 

How to make

  1. Combine the peanut butter, water, maple syrup and vanilla in a bowl and beat with a wooden spoon.

  2. Add the rolled oats, seeds, and cinnamon and mix well to incorporate everything together.

  3. With clean, wet hands, roll heaped tablespoons of mixture into 15 balls.

  4. Place on a tray lined with baking paper. Cover and chill for at least 15 minutes. Store these in an airtight container or in the fridge.

Tip

To make an oat flour, place rolled oats in a high-speed food processor and blend until the oats resemble a fine dust.
