Quick and Easy No Bake Muesli Bars
These are super quick and easy to make and a great way to use up odds and ends in your pantry.
Ingredients
1.5 cups of rolled oats
1.5 cups of a combo of nuts, seeds, coconut
0.5 cups dried fruit, choc chips
1 cup of peanut butter
½ cup of honey or maple syrup or a combo
1 tbsp butter or coconut oil
1 tsp of vanilla extract
Optional Cinnamon, mixed spice, orange zest, lemon zest
For decoration Chocolate chips to sprinkle over the top or melted chocolate
How to make
Whizz the oats in a food processor with any of the larger ingredients e.g. big nuts, dates.
Add the rest of the nuts, seeds, coconut, dried fruit, choc chips and do a very quick 1-2 second whizz just to combine but not chop up too much.
Add the peanut butter, butter or coconut oil and honey/maple syrup to a pan over a low heat and melt together but avoid letting it boil or get too hot. Allow to cool slightly then add to the food processor and pulse a few times to combine.
Press firmly into a lined baking tray and chill in the fridge for a few hours. They can go a bit crumbly if you don’t press the mixture down firmly enough so use your hand, the bottom of a jam jar or similar to push the mixture down.
Cut into slices and there you have it! Best kept in the fridge.
Notes
The butter/coconut oil is just to help it set as it goes hard when chilled, you can absolutely leave it out, it will just be a little more crumbly.
You can reduce the nuts/seeds/coconut to 1.25 cups and increase the dried fruit to 0.75 if you prefer.
