Edamame and Chickpea Salad
Protein packed salad for your next lunch or dinner!
Ingredients (serves 4)
1 can of chickpeas, drained and rinsed
1.5 cups of shelled edamame beans (can buy frozen, then boil for 5 mins) or broad beans
1 cup of green peas defrosted
2-3 large handfuls of baby spinach
50g reduced fat feta cheese - crumbled
Dressing
Juice of 1 big or 2 small lemons
3 Tbsp extra virgin olive oil
Lemon zest 1 lemon
1 Tbsp honey
2 Tbsp white wine vinegar
1 Tbsp dijon mustard
Pepper/salt to taste
How to make
1) Mix in a small bowl all dressing ingredients and set aside.
2) Combine all salad ingredients in a large bowl.
3) Add dressing to the entire salad or place in a small jug and add desired amount.
