Edamame and Chickpea Salad

Protein packed salad for your next lunch or dinner!

 

Ingredients  (serves 4)

  • 1 can of chickpeas, drained and rinsed

  • 1.5 cups of shelled edamame beans (can buy frozen, then boil for 5 mins) or broad beans 

  • 1 cup of green peas defrosted 

  • 2-3 large handfuls of baby spinach  

  • 50g reduced fat feta cheese - crumbled

Dressing

  • Juice of 1 big or 2 small lemons 

  • 3 Tbsp extra virgin olive oil  

  • Lemon zest 1 lemon 

  • 1 Tbsp honey 

  • 2 Tbsp white wine vinegar 

  • 1 Tbsp dijon  mustard  

  • Pepper/salt to taste

 

How to make

1) Mix in a small bowl all dressing ingredients and set aside. 

2) Combine all salad ingredients in a large bowl. 

3) Add dressing to the entire salad or place in a small jug and add desired amount.
