Vegetable-Full Chilli
Cheap, cheerful and delicious!
Ingredients
1 large onion finely chopped
2 carrots grated
1 large courgette grated
1 tbsp Mexican spice mix or whatever you have at hand, a few chilli flakes is fine if that’s all you have in your cupboard
1 can chopped tomatoes
1 can chilli beans and 1 can kidney beans (or whatever beans you have in)
1 cup corn and/or peas
How to make
1) Fry onion, carrot, courgette in a little oil until soft
2) Add spice mix/chilli
3) Add tomatoes and beans
4) Cook for 20mins, add splash of water if needed.
Serve with rice and then toppings of your choice - maybe cheese, avocado or tomato salsa or a light sour cream?
High fibre, low cost… winner!
Adapt to add any vegetable that you have in! No courgette, add more carrot and corn/peas.
